Abeké is seeking an experienced and quality-driven Chief Baker to lead our bakery production team and ensure consistent product quality, efficient production and excellent operational standards.
The Chief Baker will oversee daily bakery production, supervise production personnel, standardise recipes, control ingredient usage and minimise wastage while ensuring that products are prepared to the highest standards of quality, hygiene and presentation.
This role goes beyond baking. The successful candidate will combine strong technical baking expertise with leadership, production planning and cost-conscious decision-making to help build a structured, efficient and commercially successful bakery operation.
Working closely with management, the Chief Baker will translate production requirements into daily execution, ensure products are available when needed and continuously improve the bakery's processes, products and team performance.
Success in this role means consistently producing high-quality baked goods, meeting production targets, fulfilling orders on time, maintaining food safety standards, controlling avoidable wastage and developing a productive, disciplined bakery team.
The successful candidate will help establish reliable production systems that allow Abeké's bakery to grow without compromising product quality or operational efficiency.
Demonstrated professional experience in bakery production, with substantial hands-on baking expertise.
Previous experience supervising or leading a bakery production team.
Strong practical knowledge of bread production and relevant pastries, cakes and other baked products.
Ability to plan production schedules, coordinate multiple tasks and meet deadlines without compromising quality.
Good understanding of recipe standardisation, ingredient measurement, production costing and waste reduction.
Knowledge of food safety, hygiene, sanitation and proper ingredient storage.
Ability to maintain accurate production records and prepare clear operational reports.
Strong leadership, communication, organisation and problem-solving skills.
High standards of discipline, accountability, attention to detail and personal hygiene.
Ability to work effectively in a fast-paced production environment.
Production Planning and Execution: Plan, organise and supervise daily bakery production to meet sales demand, customer orders and agreed deadlines.
Product Quality and Consistency: Maintain consistent taste, texture, appearance, weight and quality across all batches and product lines.
Recipe Standardisation: Establish and enforce standard recipes, ingredient measurements, production procedures, baking temperatures and finishing standards.
Team Leadership: Supervise, train and coordinate bakers and production assistants, ensuring clear responsibilities, productivity and adherence to established procedures.
Ingredient and Cost Control: Monitor ingredient consumption, minimise wastage, reduce rejected batches and identify opportunities to improve production efficiency.
Inventory Coordination: Communicate ingredient requirements and potential shortages to the designated inventory and procurement personnel, ensuring production is not unnecessarily disrupted.
Food Safety and Hygiene: Enforce appropriate food-handling practices, sanitation procedures, safe storage and cleanliness of production areas and equipment.
Order Fulfilment: Coordinate with sales and customer service teams to ensure customer orders and retail production requirements are completed accurately and on time.
Equipment and Maintenance: Monitor the condition of baking equipment, identify faults and coordinate timely maintenance.
Production Records and Reporting: Maintain accurate records of production output, ingredient usage, wastage, rejected products and operational issues. Submit daily production reports to management.
Product Development: Develop and test new products, improve existing recipes and contribute ideas that strengthen Abeké's bakery offering.
Continuous Improvement: Identify production bottlenecks, improve workflows and implement approved procedures that enhance quality, efficiency and accountability.
